Candy Cakes

I started making candy cakes in 2012. The first one I ever made was a chocolate peanut butter (Reese's) cake. This cake was made for a child's 4th birthday. By this time I had graduated from culinary school. But i always had a knack for desserts, ever since I was about 15. Up to this point my best cake was a lemonade cake. Then my sister asked me to make her son a Reese's cake. But I had never tried to remake a familiar taste. So I got to work. I know you're not supposed to taste raw batter but I tasted a lot of batter trying to remake a Reese's candy bar. Once I conquered the easy chocolate and peanut butter, I then preceded to make a Snicker's Cake. This cake was a real challenge because there is so many different flavors. I worked harder than ever making all the different layers. Now almost 13 years later, I have tackled many candy bars.


Snicker's Cake


Section 1: List Your Ingredients



Chocolate Cake Batter

  • 4 cups cake flour

  • 2 cups sugar

  • 3 eggs

  • 1 cup cocoa powder

  • 1 ½ cups of milk

  • ½ cup oil

  • 2 tbsp vanilla bean paste

  • 2 tsp baking powder

  • ¾ tsp salt

Caramel Sauce

  • 2 cups sugar

  • ½ cup corn syrup

  • 1 tbsp tapioca powder

  • 1 tbsp milk

  • 2 tbsp butter

  • Candy thermometer

Nougat

  • 2 ½ cups egg whites

  • 2 ½ cups honey

  • 1 ½ cups Granulated Sugar

  • ½ cup of water

  • 2 tbsp vanilla bean paste

Chocolate Frosting

Peanuts


Section 2: Add Numbered Directions



  1. Chocolate Cake

    • Sift flour, sugar, salt, cocoa powder, and baking powder

    • Whisk milk, eggs, oil, and vanilla.

    • Mix wet and dry together.

    • Pour into a cake pan.

    • Bake at 350 for 45 minutes or until the toothpick comes out clean.

2. Caramel Sauce

  • Whisk milk and tapioca powder until smooth. Set aside

  • Simmer sugar and syrup until caramel temperature reads 350*.

  • Slowly whisk in butter. Slowly whisk in milk.

  • Cool to room temperature. Store in a cold dark place.

3. Nougat

  • In a standing mixer, mix the egg whites until they reach soft peaks.

  • In a separate pan boil honey until it reaches 250*

  • In a larger saucepan boil the sugar and water until the mixture reaches 300*.

  • Once the honey reaches 250, slowly whisk it into the egg. Then mix in the sugar. Mix until mixture has cooled.

  • Let come to room temperature before using


4. Once the cake is cooled, cut it in half

5. Fill with nougat and caramel. Top with other cake.

6. Frost and decorate with caramel and peanuts
